Flour less Blueberry & Banana Muffins
Serves 6 – Prep time 10min – bake for 15mins
These delicious and guilt-free muffins are super easy and only contain 6 ingredients!
I based these on a recipe I saw on the Joe Wicks Instagram, but I have included all the measurements here. I had to play around a little bit until I got the right mix.
They don’t contain nuts so you can even pop them in your kids lunchboxes.
Ingredients for 6 Muffins:
80g Jumbo Porridge Oats
2 large eggs
2 ripe Bananas (about 220g)
2tsp Vanilla extract
1tsp Baking powder
Heat your oven to 180C fan.
Use muffin cases to line a 6-whole muffin tin.
Mash up the bananas, whisk the eggs together, mix the wet ingredients and then add the oats, baking powder and blueberries.
Fill the muffin cases and bake for 15-18mins.
