I just came across these on the Deliciously Ella website, they are easy to make and don’t cost a fortune as they only contain 5 simple ingredients I always have at home anyway.
It was my daughter’s last day of the summer holidays yesterday and so we decided to whip these little beauties up for a delicious nutritious treat! They are dense and contain real calories, fat and sugar but all good and nothing added or fake!

Original recipe says it will make 12 but we made 14 cookies out of this, I don’t have almond milk at home so I used Alpro Coconut instead.
180g ground almonds
100g soft pitted dates (original recipe calls for 12 medjool dates)
40g of dark choc chips or raisins
3 tbsp alpro coconut milk (original recipe calls for almond milk) but you can use any milk you like really
1tbsp chia seeds
Preheat your oven to 180C fan
Line a baking tray with baking paper
Place all ingredients except choc chips in a blender and mix until it forms a dough like consistency, add choc chips (or raisins) and give another little whiz.
Make into 12-14 balls and squish down on baking paper to form cookies.
Bake for 15-20min
Leave to cool down on a wire rack
